Ingredients (for 1 person)
• 100 ml coffee
• 40 ml espresso
• 2 egg yolks
• 35 g sugar
• 1 pinch cardamom
• Beat the yolks and sugar in a chrome steel bowl until frothy.
• Over a pan of simmering water, add the coffee to the yolk mixture, stirring constantly, and continue beating until the mixture is airy and firm.
• Prepare the espresso in a tall glass and add sugar and cardamom.
• Top up the glass with the coffee foam.
• Serve immediately.
